Italian Shrimp – inspired by Italy’s Amalfi Coast seafood cuisine.
1 lb large raw shrimp – cleaned and deveined
4 tbsps olive oil
3 tbsps vegetable oil
1 cup plain fine bread crumbs
1 garlic clove crushed
1 tsp chopped fresh parsley
salt and pepper
In a bowl, mix the two oils and add the shrimp. Toss well to coat.
Add the crumbs, garlic parsley, salt and papper
Toss well, cover and marinate 1 hour.
Skewer the shrmp and grill 2 minutes per side
Serve with lemon wedges.
