Great on fish!
2 tbsps butter – separated
2 shallots finely chopped (2 tbsps)
2 tbsps. flour
1/2 cup white wine
1 cup bottled claim juice
3/4 cup heavy cream
juice of 1/2 lemon
Melt 1 tbsps butter i a pan and add the shallots, flour and wine, whisking well. Cook for a few seconds.
Add clam broth and cook about 5 minutes or until reduced to 1-1/4 cups.
Add cream and bring to boil, whisking constantly.
Remove from heat and add lemon juice. Pour thru a strainer and swirl in 1 tbsps butter.
Great for fish dishes!!!
