Pork Satay on Lemon Grass with Thai Chili Sauce

Lemongrass may be hard to find. Look for it in smaller Asian markets.
1 lb ground pork

2 garlic cloves – crushed
1/2 tsp dry coriander (or 1 tsp fresh)
1/2 tsp sugar
1 tbsp soy sauce
salt and pepper

Mix all ingredients in a large bowl. Divide into 8 sections and form each section on to a lemon grass stick
Grill 3-4 minutes on each.

Side with sauce

Sweet Chili Sauce

3 cloves garlic, minced
1/2 cup rice wine vinegar
1/2 cup plus 2 tbsps sugar
1/4 cup water
3 tbsps fish sauce
2 tbsps sherry
1/2 – 1 tsp crushed red pepper

Mix all in a pot, put on stove, boil, then simmer until reduced by half.
In another bowl, mix 1-1/2 tbsps cornstarch and 3 tbsps cold water. Mix well. Add to mixture in pot and cook on low for 2-3 minutes
