The old fashioned Welsh cheese sauce spiked with beer.
3 Tbs.butter
3 Tbs. whole wheat flour
11/2 cups beer or ale at room temperature
1lb. Cheddar cheese coarsely grated
1 tsp. dry mustard
1/2 tsp. prepared horseradish
A few drops Tabasco sauce
Ground black pepper
In a medium-large saucepan, melt the butter. Whisk in the flour and dry mustard. Lower heat and cook, whisking 5 minutes. Whisk in beer and cook 8-10 minutes more. Add rest of the remaining ingredients and cook over very low heat 8-10 minutes more.
Serve on toasted bread, muffins or saltine crackers. Serve as is or top with apple or tomato slices, toasted nuts, or sauteed mushrooms or roasted asparagus. The toppings are only limited by your imagination.
