Spanish Rice

In a large fry pan, heat 4-5 tbsps oil.
Stir in 2 tbsps chopped onion and saute will soft.
Mix in 1-1/2 cups of uncooked white rice.
Saute until the rice just becomes lightly browned.
Add 2 cups of chicken broth and 1 cup of chunky salsa (mild or hot)
Reduce heat to low and cook for about 20 minutes.

Check every 5 minutes or so. If the pan becomes too dry, add a bit more broth or water and keep cooking until the rice is soft.
